Skillet Taco Pizza

Ingredients:
  • All-purpose flour - dusting
  • Room temperature pizza dough - 1 pound
  • Extra virgin olive oil - 3 tablespoons
  • Sliced garlic cloves - 2
  • 15-ounce can of crushed, fire-roasted tomatoes - 1
  • Dried oregano - 1/2 teaspoon
  • Kosher salt
  • Ground pepper
  • Ground beef - 8 ounces
  • Chili powder - 1 tablespoon
  • Garlic powder - 1/2 teaspoon
  • Ground cumin - 1 teaspoon
  • Shredded cheddar cheese - 1 cup
  • Thinly sliced red onion - 1/2
  • Shredded mozzarella cheese - 1 cup
Instructions:
  1. Preheat your oven to 525 degrees, or the highest temperature available. Create a 12- or 13-inch circle with the pizza dough on a surface dusted with flour. Cover the pizza dough with a light kitchen towel.
  2. Heat a medium saucepan over medium-high heat. Add 2 tablespoons of the olive oil. Once heated, add all the garlic and stir until lightly browned – roughly 2 minutes. Add the oregano and tomatoes. Boil the mixture and then simmer until the sauce thickens and reduces to roughly 1 cup, which should take about 10-12 minutes. Add salt and pepper to taste.
  3. While the sauce simmers, add the last 1 tablespoon of olive oil to a medium skillet over medium-high heat. Add the beef. Season with salt and pepper. Cook the beef for 4-5 minutes, until it's no longer pink. Stir in all the chili powder, garlic powder, and ground cumin, cooking for 1-2 additional minutes. Use a slotted spoon to drain the beef mixture and move it to a bowl.
  4. Place a 12-inch cast-iron skillet on medium-high heat. Add a light sprinkle of flour followed quickly by the pizza dough. Make sure it fills the whole pan. Allow the dough to cook for 1-2 minutes or until it starts to inflate. Add the tomato sauce and then the beef mixture. Finally, add the cheddar cheese, red onion, and mozzarella cheese. Place the skillet in the oven. Bake until the edges are brown and the cheese is bubbling for roughly 10-12 minutes.
  5. Allow the pizza to cool somewhat. Add toppings of your choice like lettuce, avocado, and fresh tomato. Slice and serve.
