Ingredients
- 3 boneless, skinless chicken breasts, sliced lengthwise into cutlets.
- 1/2 teaspoon salt.
- 1/4 teaspoon black pepper.
- 6 tablespoons all-purpose flour.
- 2 tablespoons olive oil.
- 2 tablespoons unsalted butter.
- 3 cloves garlic, minced.
- 1 cup chicken stock.
- 1 cup heavy cream.
- 1/2 cup parmesan cheese, grated.
- 1 teaspoon chili flakes.
- 1/4 teaspoon oregano.
- 1/4 teaspoon thyme.
- 1/3 cup sun-dried tomatoes, chopped.
- 1 tablespoon fresh basil.
Instructions
- Season the chicken cutlets with salt and pepper. Dredge the cutlets in flour and shake off any excess.
- In a skillet, heat the oil and butter over medium heat. Make sure to coat the skillet evenly.
- Cook the chicken for four to five minutes on each side until browned and cooked through. Transfer to a plate, cover, and set aside.
- Saute the garlic until fragrant. Add the stock, deglazing the bottom of the pan by scraping it with a wooden spoon.
- Turn the heat down to medium-low. Add the cream and parmesan cheese. Bring to a simmer and season with chili flakes, thyme, and oregano.
- Add salt and pepper to taste. Add the sun-dried tomatoes. Place the chicken back in the skillet with the sauce. Allow the sauce to thicken while simmering, usually for a few minutes.
