Ingredients

  • 3 boneless, skinless chicken breasts, sliced lengthwise into cutlets.
  • 1/2 teaspoon salt.
  • 1/4 teaspoon black pepper.
  • 6 tablespoons all-purpose flour.
  • 2 tablespoons olive oil.
  • 2 tablespoons unsalted butter.
  • 3 cloves garlic, minced.
  • 1 cup chicken stock.
  • 1 cup heavy cream.
  • 1/2 cup parmesan cheese, grated.
  • 1 teaspoon chili flakes.
  • 1/4 teaspoon oregano.
  • 1/4 teaspoon thyme.
  • 1/3 cup sun-dried tomatoes, chopped.
  • 1 tablespoon fresh basil.

Instructions

  1. Season the chicken cutlets with salt and pepper. Dredge the cutlets in flour and shake off any excess.
  2. In a skillet, heat the oil and butter over medium heat. Make sure to coat the skillet evenly.
  3. Cook the chicken for four to five minutes on each side until browned and cooked through. Transfer to a plate, cover, and set aside.
